Description

Pumpkin Cheesecake Truffles are the ultimate fall treat blending rich cheesecake with warm pumpkin spice. Perfect for Halloween or Thanksgiving gatherings.


Ingredients

1 tablespoon butter

4 ounces cream cheese, softened

1/2 cup canned pumpkin puree

1 can (14 ounces) sweetened condensed milk

1 1/2 teaspoons pumpkin pie spice

1/2 cup graham cracker crumbs

1/3 cup white chocolate chips

Granulated sugar (for rolling)

Chocolate chips (for topping)


Instructions

1. In a non-stick skillet over medium heat, melt butter and mix in cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice until thickened.

2. Stir in graham cracker crumbs and white chocolate chips until well combined.

3. Pour the mixture onto a butter-greased baking sheet, spread evenly, and refrigerate for at least 2 hours or overnight until firm.

4. Roll chilled mixture into small balls using buttered hands and coat each ball with granulated sugar.

5. Decorate with ridges using a toothpick and top with chocolate chips to resemble stems.

Notes

Store in an airtight container in the fridge up to 5 days.

Freeze for up to 2 months for easy make-ahead desserts.
