Description

Smothered Chicken and Rice is a comforting stovetop dinner with tender chicken in a creamy gravy served over fluffy rice.


Ingredients

Scale
  • 1 lb boneless skinless chicken breasts or thighs
  • 1 cup white rice
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon Italian herbs
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken with salt pepper and paprika
  2. Sear chicken in butter until golden and set aside
  3. Sauté onion until soft then add garlic
  4. Sprinkle flour and whisk in broth and cream
  5. Season sauce and return chicken to simmer
  6. Cook rice separately according to package instructions
  7. Serve chicken and sauce over rice

Notes

  1. Add cayenne for heat
  2. Use half-and-half for a lighter sauce
  3. Store leftovers up to three days refrigerated
