Description

Spaghetti Aglio E Olio is a classic Italian pasta made with garlic, olive oil, and red pepper flakes. This simple recipe takes only 25 minutes and delivers rich flavor using just a few ingredients.


Ingredients

  • 400 g (14 oz) Spaghetti
  • 4 tablespoons Extra Virgin Olive Oil
  • 6 cloves Garlic thinly sliced
  • 1/2 teaspoon Red Pepper Flakes
  • 1/4 cup Fresh Parsley chopped
  • Salt for pasta water
  • Grated Parmesan Cheese optional

Instructions

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente while reserving half a cup of pasta cooking water
  2. Heat olive oil in a large skillet over medium heat and sauté the sliced garlic for 1 to 2 minutes until lightly golden
  3. Add the red pepper flakes and stir briefly to release their flavor into the oil
  4. Add the drained spaghetti to the skillet and toss well with the garlic and olive oil
  5. Add a splash of reserved pasta water if needed to help coat the pasta evenly
  6. Stir in the chopped parsley and toss again
  7. Serve immediately and optionally sprinkle grated Parmesan cheese on top

Notes

  1. Do not burn the garlic because it will make the dish taste bitter
  2. Reserve pasta cooking water to help the sauce coat the spaghetti
  3. Use good quality extra virgin olive oil for the best flavor
