  • 1/2 cup fiesta tortilla strips
  • 1/2 cup reduced-fat sour cream
  • 6 large flour tortillas

Instructions

  • Cook the Beef: Heat a skillet over medium heat. Brown the ground beef, drain excess fat, and mix in taco seasoning with water. Simmer until fully combined and fragrant.
  • Prepare the Rice: Cook rice according to package instructions. Mix with a pinch of salt, pepper, and a splash of lime juice for extra flavor.
  • Warm the Tortillas: Heat each tortilla in a skillet or microwave until soft and pliable.
  • Assemble the Burrito: Place a tortilla flat. Spread 1/3 cup of seasoned rice in the center, top with 1/4 cup of beef, 2 tbsp nacho cheese sauce, 1 tbsp shredded cheese, and a handful of fiesta strips. Finish with a dollop of sour cream.
  • Wrap It Up: Fold in the sides of the tortilla, then roll tightly from the bottom to secure the filling.
