Description
Crispy Thai sweet chili chicken tossed in garlic, lime, and sweet chili sauce, ready in under 30 minutes and served over rice.

- 12 oz skinless boneless chicken breast or thigh, cut into small pieces
- Oil for deep frying
- 1 tablespoon oil
- 2 cloves garlic, minced
- 4 tablespoons Thai sweet chili sauce
- 1 teaspoon lime juice
- 1 pinch salt
- 1/2 teaspoon white sesame seeds
- 1/2 tablespoon chopped cilantro leaves
- 1 egg white
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 cup ice-cold water
- 1 tablespoon cooking oil
- 1 pinch salt
Instructions
- Mix batter ingredients until smooth and add chicken to coat evenly.
- Heat oil and deep fry chicken until golden and crisp, then drain on paper towels.
- Heat oil in a wok, stir-fry garlic until fragrant, then add chicken, sauce, lime juice, and salt.
- Toss well, garnish with sesame seeds and cilantro, and serve immediately.
Notes
- Use ice-cold water for a lighter batter.
- Do not overcrowd the pan while frying.
- Serve immediately for best texture.
