Description

Crispy Thai sweet chili chicken tossed in garlic, lime, and sweet chili sauce, ready in under 30 minutes and served over rice.


Ingredients

  • 12 oz skinless boneless chicken breast or thigh, cut into small pieces
  • Oil for deep frying
  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 4 tablespoons Thai sweet chili sauce
  • 1 teaspoon lime juice
  • 1 pinch salt
  • 1/2 teaspoon white sesame seeds
  • 1/2 tablespoon chopped cilantro leaves
  • 1 egg white
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup ice-cold water
  • 1 tablespoon cooking oil
  • 1 pinch salt

Instructions

  1. Mix batter ingredients until smooth and add chicken to coat evenly.
  2. Heat oil and deep fry chicken until golden and crisp, then drain on paper towels.
  3. Heat oil in a wok, stir-fry garlic until fragrant, then add chicken, sauce, lime juice, and salt.
  4. Toss well, garnish with sesame seeds and cilantro, and serve immediately.

Notes

  1. Use ice-cold water for a lighter batter.
  2. Do not overcrowd the pan while frying.
  3. Serve immediately for best texture.
