Ingredients

  • 2 cups cooked, shredded chicken
  • 12 oz spaghetti or linguine
  • 2 cups mushrooms, sliced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp garlic powder
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional, for pasta)
  • Fresh parsley for garnish

Instructions

  • Cook the Chicken: Use pre-cooked chicken or season raw chicken with salt and pepper. Roast or sauté until cooked, then shred into bite-sized pieces.
  • Prepare the Pasta: Boil pasta in salted water until al dente. Drain and set aside. Toss with olive oil to prevent sticking if desired.
  • Sauté the Mushrooms: In a large skillet, melt 1 tbsp of butter and cook mushrooms until tender and golden. Set aside.
  • Make the Sauce: In the same skillet, melt the remaining butter. Whisk in flour to form a roux and cook for 1-2 minutes. Gradually add chicken broth, stirring constantly, then pour in the cream. Add garlic powder, salt, and pepper. Stir until the sauce thickens.
  • Combine Ingredients: In a large bowl, mix pasta, chicken, mushrooms, sauce, and Parmesan cheese until evenly coated.
  • Bake the Casserole: Preheat oven to 375°F (190°C). Transfer the mixture to a greased 9×13-inch baking dish. Top with mozzarella cheese. Bake for 20-25 minutes or until the cheese is melted and golden.
  • Serve and Enjoy: Let the casserole rest for a few minutes before serving. Garnish with fresh parsley and extra Parmesan if desired.

Notes

  • Prevent Dryness: Cover the casserole with foil while baking to keep the dish moist. Remove the foil during the last 5-10 minutes for a golden, bubbly top.
  • Perfect Sauce Consistency: Ensure the sauce is thick enough to coat the pasta but not too thick—it should still flow easily. Adjust with extra broth or cream as needed.
