Description

A hearty, comforting breakfast dish that brings everyone to the table. This casserole combines savory sausage, fluffy eggs, gooey cheese, and bread or potatoes for a perfect morning treat. Prep ahead or bake fresh—it’s versatile and satisfying!

Ingredients

Scale
  • 1 lb breakfast sausage
  • 6 large eggs
  • 2 cups milk
  • 1 ½ cups shredded cheddar cheese
  • 4 cups bread cubes (or diced potatoes)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: diced bell peppers, onions, or spinach for added flavor

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  • In a skillet, cook sausage over medium heat until browned and crumbled. Drain excess fat.
  • If using vegetables, sauté them until softened. Set aside.
  • In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  • Layer bread cubes (or potatoes) evenly in the casserole dish. Top with cooked sausage, vegetables, and half of the cheese.
  • Pour the egg mixture over the layers, ensuring it soaks through. Sprinkle the remaining cheese on top.
  • Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until the top is golden and a knife inserted in the center comes out clean.
  • Let cool for 5 minutes before serving. Enjoy!

Notes

1️⃣ Use Stale or Toasted Bread: If using bread, opt for stale or lightly toasted cubes. They soak up the egg mixture better, preventing a soggy casserole.

2️⃣ Customize to Taste: This recipe is highly versatile! Add veggies like spinach or bell peppers for more nutrition, or swap sausage with bacon or plant-based alternatives to suit dietary preferences.

3️⃣ Make It Ahead: Assemble the casserole the night before and refrigerate. In the morning, simply bake it—perfect for saving time on busy mornings or holiday brunches.
