Description

Crispy, cheesy, and flavorful—baked chicken taquitos are the perfect snack, appetizer, or meal. Healthier than fried, these taquitos are easy to prepare and completely customizable!

 


Ingredients

  • 2 cups shredded chicken (rotisserie works great)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup salsa (optional for extra flavor)
  • 810 corn tortillas (or flour tortillas, if preferred)
  • Cooking spray or a light brush of olive oil

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Prepare the filling: In a large bowl, combine shredded chicken, shredded cheese, cumin, chili powder, garlic powder, onion powder, and salsa (if using). Mix until well combined.
  • Warm the tortillas: Wrap tortillas in a damp paper towel and microwave for 20-30 seconds to make them pliable and prevent cracking.
  • Assemble the taquitos:
    • Place 2-3 tablespoons of chicken mixture down the center of each tortilla.
    • Roll the tortilla tightly around the filling and place it seam-side down on the baking sheet.
    • Repeat with all the tortillas and filling.
  • Bake: Lightly spray or brush the rolled taquitos with cooking oil for extra crispiness. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
  • Serve: Enjoy warm with your favorite dips like guacamole, salsa, or sour cream.

Notes

  • Warm the Tortillas Before Rolling: Heating the tortillas makes them more flexible and prevents cracking when rolling. Wrap them in a damp paper towel and microwave for 20-30 seconds to keep them pliable.
  • Don’t Overfill the Taquitos: Use 2-3 tablespoons of filling per tortilla to ensure they roll tightly and hold their shape while baking. Overfilling can cause them to burst or spill during baking.
  • Lightly Oil for Extra Crispiness: Spraying or brushing the taquitos with a light layer of oil before baking helps achieve that golden, crispy texture without frying.
