Description

7-Up Salad is a classic retro dessert that brings back the charm of mid-century potlucks and family gatherings. Made with lime Jell-O, fizzy 7-Up soda, crushed pineapple, and cream cheese, it’s a jiggly, sweet, and nostalgic treat. Easy to make and always a conversation starter, this vintage “salad” is perfect for holidays, church dinners, or just a fun slice of Americana.

Ingredients

Scale
  • 1 box (3 oz) lime Jell-O

  • 1 cup boiling water

  • 1 cup cold 7-Up soda

  • 1 can (8 oz) crushed pineapple, drained

  • 1 package (8 oz) cream cheese, softened

  • 1 tub (8 oz) whipped topping (or whipped cream)

Optional Add-ins:

  • ½ cup mini marshmallows

  • ¼ cup chopped pecans or walnuts

  • Maraschino cherries (for garnish)

Instructions

  • In a large bowl, dissolve the Jell-O in boiling water. Stir for 2 minutes.

  • Pour in cold 7-Up and stir gently.

  • In another bowl, beat the cream cheese until smooth.

  • Slowly add the Jell-O mix to the cream cheese. Stir until mostly smooth.

  • Fold in the drained pineapple.

  • Gently fold in the whipped topping.

  • Optional: Add marshmallows or nuts.

  • Pour mixture into a lightly greased mold or glass dish.

  • Cover and refrigerate for at least 4 hours, or until fully set.

  • Slice and serve chilled. Top with cherries if desired.

Notes

  • Let Jell-O cool slightly before adding whipped topping to avoid melting.

  • Lightly greasing the mold helps with easy release.

  • Avoid fresh pineapple or kiwi, which prevent gelatin from setting.

  • Use sugar-free or dairy-free swaps to make it lighter.
