Description
Agua de Pepino is a refreshing Mexican cucumber agua fresca made with cucumbers, lime juice, sugar, and water. Serve it chilled over ice for a bright warm-weather drink.
Ingredients

- 2 medium cucumbers, peeled and cut into chunks
- 6 cups room-temperature water, divided
- 1/4 cup fresh lime juice
- 1/3 cup sugar, or more to taste
- Ice cubes, for serving
- Cucumber slices, for garnish
Instructions
- Wash, peel, and cut the cucumbers into chunks.
- Add the cucumber chunks, lime juice, and 2 cups of water to a blender.
- Blend until smooth.
- Strain the mixture into a large pitcher.
- Add the sugar and stir well until dissolved.
- Add the remaining 4 cups of water and mix well.
- Taste and add more sugar if desired.
- Serve in glasses with ice, or chill the pitcher for 1 to 2 hours before serving.
- Garnish with cucumber slices and enjoy.
Notes
- Use room-temperature water so the sugar dissolves easily.
- Keep the cucumber seeds because they add fiber and minerals.
- Leave the peel on organic cucumbers for a greener color and added nutrients.
- Stir before serving because natural separation may occur.
