Ingredients
2 boneless, skinless chicken breasts or thighs
1 zucchini, sliced
1 bell pepper, diced
1 cup mushrooms, sliced
1/2 cup broccoli florets
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp garlic, minced
1 tsp ginger, grated
1 tbsp olive oil or sesame oil (for veggies)
1/2 tsp salt
1/4 tsp pepper
Optional: 1/2 tsp red pepper flakes (for heat)
Optional: Rice or noodles for serving
Optional: Yum yum sauce for dipping
Instructions
Marinate the Chicken
In a small bowl, mix soy sauce, sesame oil, garlic, ginger, and optional red pepper flakes. Add the chicken to the marinade and let it sit for 15-20 minutes (or up to 2 hours for more flavor).Prepare the Vegetables
Wash and slice the zucchini, bell pepper, mushrooms, and broccoli into even-sized pieces. Toss them in olive oil, salt, and pepper.Preheat the Air Fryer
Preheat the air fryer to 375°F (190°C) for 5 minutes.Cook the Chicken
Place the marinated chicken in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C).Cook the Vegetables
Add the seasoned vegetables to the air fryer basket. Cook for 8-10 minutes, shaking the basket halfway through, until crispy and tender.Assemble the Dish
Once everything is cooked, slice the chicken and arrange it in bowls. Add the vegetables and serve with optional rice or noodles. Garnish with fresh herbs if desired.
Notes
For a vegan version, swap the chicken for tofu or tempeh.
If you prefer extra heat, use more red pepper flakes or a spicy BBQ sauce for dipping.
