Description

French bakery style almond croissants made with day-old croissants, almond cream, and light syrup.


Ingredients

Scale
  • 8 one-day-old croissants
  • 1 cup water
  • 2 Tbsp sugar
  • 4 Tbsp rum or 1 tsp vanilla
  • 1/2 cup sugar
  • 1 cup almond meal
  • 1/8 tsp salt
  • 8 Tbsp unsalted butter
  • 2 large eggs
  • 3 Tbsp sliced almonds
  • Powdered sugar

Instructions

  1. Prepare syrup and cool
  2. Make almond filling until creamy
  3. Slice croissants horizontally
  4. Dip croissants lightly in syrup
  5. Fill with almond cream
  6. Top with filling and almonds
  7. Bake until golden
  8. Cool and dust with sugar

Notes

  1. Use day-old croissants
  2. Do not oversoak in syrup
  3. Serve same day for best texture
