Ingredients
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 1/2 cups (360ml) unsweetened applesauce
- 1/2 cup (120ml) vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup (75g) chopped walnuts or pecans (optional)
- 1/2 cup (75g) raisins (optional)
Instructions
1️⃣ Preheat oven to 350°F (175°C). Grease a 9×9-inch (23×23 cm) cake pan or line it with parchment paper.
2️⃣ Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3️⃣ Mix Wet Ingredients: In another bowl, beat eggs with granulated sugar and brown sugar until smooth. Add applesauce, oil, and vanilla extract, mixing well.
4️⃣ Combine: Gradually add the dry ingredients into the wet mixture, stirring until just combined. If using, fold in nuts and raisins.
5️⃣ Bake: Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
6️⃣ Cool & Serve: Let the cake cool for 10 minutes in the pan before transferring to a wire rack. Dust with powdered sugar or serve with whipped cream if desired.
