- 4 pounds whole chicken
- 4 quarts water
- 1/4 cup chicken broth base
- 2 stalks celery, roughly chopped
- 1 small onion, diced
- 1/4 cup parsley
- 12 ounces dried Amish-style egg noodles
- 10 ounces cream of chicken soup
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Add the whole chicken, water, chicken broth base, celery, onion, and parsley to a large stockpot and bring to a boil.
- Reduce heat to a simmer, cover, and cook for 2 to 3 hours.
- Remove the chicken and shred the meat into bite-sized pieces.
- Strain the broth and return 4 cups of broth to the pot; bring to a boil.
- Add egg noodles and shredded chicken, cover, and turn off heat.
- Let sit for 30 minutes, stirring every 10 minutes.
- If needed, cook 1 to 2 more minutes until noodles are tender.
- Stir in cream of chicken soup and butter until melted and thickened.
- Season with salt and pepper and serve warm.
