Description

Soft and buttery oatmeal bars layered with sweet tangy rhubarb filling and a golden crumb topping.


Ingredients

Scale
  • 1 cup old fashioned rolled oats
  • 3/4 cup all purpose flour
  • 1/2 cup butter softened
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar packed
  • 1 1/2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F
  2. Mix oats, flour, butter, salt, baking soda, and brown sugar into crumbs
  3. Cook rhubarb, sugar, cornstarch, and water until thick
  4. Stir in vanilla and cool slightly
  5. Press most crumbs into pan as base
  6. Spread rhubarb filling evenly
  7. Add remaining crumbs on top
  8. Bake 30 to 40 minutes until golden
  9. Cool completely before cutting
