  • 9 lasagna noodles (regular or no-boil)
  • 3 large apples (Fuji or Gala), peeled, cored, and sliced
  • 1 cup apricots, chopped (fresh or dried)
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 cup ricotta cheese
  • ½ cup mascarpone cheese
  • ½ cup heavy cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • ¼ cup chopped walnuts (optional)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Prepare fruit filling: In a pan, melt butter over medium heat. Add apples, apricots, brown sugar, cinnamon, and nutmeg. Cook for 5 minutes until softened. Let cool.
  • Cook lasagna noodles according to package instructions if using regular noodles. Drain and set aside.
  • Make the creamy filling: In a bowl, whisk ricotta, mascarpone, heavy cream, eggs, and vanilla until smooth.
  • Assemble the lasagna:
    • Spread a thin layer of creamy filling on the bottom of the baking dish.
    • Add a layer of noodles, followed by fruit filling, and more creamy mixture.
    • Repeat layers, finishing with noodles and a little cream on top. Sprinkle with walnuts if desired.
  • Bake for 40-45 minutes until golden and bubbly.
  • Cool for 10-15 minutes before slicing. Serve warm and enjoy!
