- 9 lasagna noodles (regular or no-boil)
- 3 large apples (Fuji or Gala), peeled, cored, and sliced
- 1 cup apricots, chopped (fresh or dried)
- ½ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 cup ricotta cheese
- ½ cup mascarpone cheese
- ½ cup heavy cream
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp butter
- ¼ cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare fruit filling: In a pan, melt butter over medium heat. Add apples, apricots, brown sugar, cinnamon, and nutmeg. Cook for 5 minutes until softened. Let cool.
- Cook lasagna noodles according to package instructions if using regular noodles. Drain and set aside.
- Make the creamy filling: In a bowl, whisk ricotta, mascarpone, heavy cream, eggs, and vanilla until smooth.
- Assemble the lasagna:
- Spread a thin layer of creamy filling on the bottom of the baking dish.
- Add a layer of noodles, followed by fruit filling, and more creamy mixture.
- Repeat layers, finishing with noodles and a little cream on top. Sprinkle with walnuts if desired.
- Bake for 40-45 minutes until golden and bubbly.
- Cool for 10-15 minutes before slicing. Serve warm and enjoy!
