Description

Ingredients

  • Dry Ingredients:
    • 2 cups all-purpose flour
    • 1 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
    • 2 tsp baking powder
    • 1/2 tsp salt
  • Wet Ingredients:
    • 2 large eggs
    • 1 cup granulated sugar
    • 1/2 cup vegetable oil
    • 1/2 cup applesauce
    • 1 tsp vanilla extract
  • Add-ins:
    • 1 1/2 cups finely chopped apples (Granny Smith or Honeycrisp)
    • 1/2 cup chopped toasted pecans
  • Topping:
    • 2 tbsp granulated sugar
    • 1/2 tsp ground cinnamon
    • 1/4 cup chopped toasted pecans

Instructions

  • Preheat Oven: Preheat to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, cinnamon, nutmeg, baking powder, and salt.
  • Mix Wet Ingredients: In another bowl, whisk eggs, sugar, oil, applesauce, and vanilla extract until smooth.
  • Combine Mixtures: Pour wet ingredients into dry ingredients. Stir gently until just combined.
  • Fold in Add-ins: Add chopped apples and toasted pecans, folding them into the batter evenly.
  • Prepare Topping: In a small bowl, mix sugar, cinnamon, and pecans.
  • Assemble: Pour batter into the prepared loaf pan and sprinkle the topping evenly.
  • Bake: Bake for 60–70 minutes or until a toothpick inserted in the center comes out clean.
  • Cool: Let the bread cool in the pan for 10–15 minutes before transferring it to a wire rack.

Notes

1️⃣ Don’t Overmix the Batter: Overmixing can make your bread dense and tough. Stir until the wet and dry ingredients are just combined to ensure a light and fluffy texture.

2️⃣ Choose the Right Apples: Use firm, tart apples like Granny Smith or sweet, crisp varieties like Honeycrisp. They hold their shape and add the perfect balance of flavor and moisture.

3️⃣ Monitor Baking Time: Every oven is different. Start checking at the 60-minute mark with a toothpick. If the top browns too quickly, lightly cover it with aluminum foil to prevent burning.
