A rich, creamy apple crumble cheesecake with a buttery crust, spiced apple filling, and golden crumble topping—perfect for autumn celebrations.
Ingredients
For Crust:
2 cups graham cracker crumbs
½ cup melted butter
2 tbsp sugar
For Cheesecake:
24 oz cream cheese
1 cup sugar
1 tsp vanilla extract
3 eggs
1 cup sour cream
For Apple Filling:
3 apples diced
⅓ cup brown sugar
1 tsp cinnamon
2 tbsp cornstarch + 2 tbsp water
1 tbsp lemon juice
For Crumble:
¾ cup flour
½ cup brown sugar
½ tsp cinnamon
½ cup cold butter
Instructions
1. Preheat oven to 325°F (160°C). Mix crust ingredients and press into pan. Bake 10 mins.
2. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then sour cream.
3. Cook apples with sugar, cinnamon, and lemon until soft. Add cornstarch slurry to thicken.
4. Spoon apple filling over cheesecake layer.
5. Mix crumble ingredients, sprinkle on top, and bake 55–65 mins. Cool and chill.
Notes
Chill at least 4 hours for best texture. Pairs beautifully with caramel drizzle or whipped cream.
