Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup vegetable oil (or melted butter)
- 1 cup packed brown sugar
- 1 cup white sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups peeled and chopped apples (Granny Smith or Honeycrisp recommended)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup milk
- 1/4 cup butter
- 1/4 cup packed brown sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
- In a large mixing bowl, combine oil, brown sugar, and white sugar. Whisk until smooth.
- Add eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Gently fold in the chopped apples and nuts.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 15 minutes before transferring it to a wire rack.
- For the glaze: In a small saucepan, melt butter over medium heat. Stir in brown sugar and milk, bringing it to a gentle simmer for 2-3 minutes. Remove from heat, add vanilla, and drizzle over the cooled cake.
