Ingredients
Scale
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 large eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 2 cups diced apples (Honeycrisp, Granny Smith, or Gala)
- Oil for frying (if frying)
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp apple cider or milk (for glaze)
Instructions
- Prepare Batter: In a large bowl, whisk together flour, baking powder, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. In another bowl, mix eggs, milk, and vanilla extract until smooth. Gradually combine the wet and dry ingredients until a thick batter forms. Gently fold in the diced apples.
- Frying Method: Heat oil in a deep pan to 375°F (190°C). Drop spoonfuls of batter into the hot oil, frying in batches for 2–3 minutes or until golden brown. Drain on paper towels.
- Baking Method: Preheat your oven to 400°F (200°C). Scoop batter onto a greased or parchment-lined baking sheet. Bake for 10 minutes, then broil for 1–2 minutes to caramelize the tops.
- Glaze: Mix powdered sugar with apple cider or milk until smooth. Drizzle or dip the warm fritter bites in the glaze. Let set for a few minutes before serving.
Notes
- Apple Selection Matters: Choose apples that balance sweetness and tartness, like Honeycrisp or Granny Smith, for a flavorful bite. Avoid overly soft apples, as they can become mushy during cooking.
- Monitor Oil Temperature: If frying, keep the oil temperature steady at 375°F (190°C) to ensure fritters cook evenly and don’t absorb too much oil.
- Glaze While Warm: Apply the glaze when the fritter bites are still warm to help it set beautifully and add a delightful sweetness to every bite.
