Description

A luscious dessert blending the rich, buttery texture of pound cake with the cinnamon-kissed, fruity essence of apple fritters. This cake is an irresistible fusion perfect for any gathering!

 


Ingredients

    • For the Cake:
      2 cups all-purpose flour
      1 ½ tsp baking powder
      ½ tsp salt
      1 cup unsalted butter (room temperature)
      1 cup granulated sugar
      4 large eggs (room temperature)
      ½ cup milk
      1 tsp vanilla extract
      2 cups peeled, diced apples (Granny Smith or Honeycrisp)
      1 tsp cinnamon
    • For the Cinnamon Sugar Layer:
      ¼ cup granulated sugar
      1 tsp cinnamon
    • For the Glaze:
      1 cup powdered sugar
      23 tbsp milk
      ½ tsp vanilla extract

Instructions

  1. Preheat & Prep Pan:
    Preheat the oven to 350°F (175°C). Grease and flour a loaf or bundt pan.
  2. Prepare Apples:
    Toss diced apples with 1 tsp cinnamon and set aside.
  3. Make Batter:
    In a bowl, sift flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy (about 3-4 minutes). Add eggs one at a time, mixing well after each. Stir in vanilla. Alternate adding dry ingredients and milk, beginning and ending with dry. Mix until just combined.
  4. Layer the Cake:
    Pour half the batter into the prepared pan. Sprinkle with half the cinnamon sugar layer, then half the apples. Repeat with the remaining batter, cinnamon sugar, and apples. Lightly swirl layers with a knife for a marbled effect.
  5. Bake:
    Bake for 50-60 minutes or until a toothpick comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  6. Glaze:
    In a bowl, mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.

Notes

  • Use Fresh, Firm Apples:
    Opt for firm apples like Granny Smith or Honeycrisp to ensure they maintain their shape and don’t become mushy during baking. This adds texture and a balance of tartness and sweetness to the cake.
  • Don’t Overmix the Batter:
    Mix just until the ingredients are combined to keep the cake light and moist. Overmixing can result in a dense, tough texture.
  • Cool Completely Before Glazing:
    Allow the cake to cool fully before drizzling the glaze. A warm cake will cause the glaze to melt and lose its consistency, making it runny.
