Ingredients

Scale

For the Cake:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 2 cups peeled and chopped apples (e.g., Granny Smith or Fuji)
  • 1 cup chopped pecans

For the Caramel Glaze:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Prepare the Batter:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9-inch Bundt or tube pan.
    • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
    • In another bowl, combine sugar, oil, eggs, vanilla extract, and sour cream.
    • Gradually fold the dry ingredients into the wet mixture until just combined.
    • Gently stir in chopped apples and pecans.
  • Bake the Cake:
    • Pour the batter into the prepared pan and spread evenly.
    • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
    • Let the cake cool in the pan for 15 minutes before transferring to a cooling rack.
  • Make the Caramel Glaze:
    • In a saucepan over medium heat, melt butter.
    • Add brown sugar and heavy cream, stirring continuously.
    • Bring to a simmer and cook for 2-3 minutes.
    • Remove from heat, stir in vanilla extract and salt.
  • Assemble the Cake:
    • Once the cake is completely cooled, drizzle the caramel glaze generously over the top.
    • Let it set before slicing and serving.

Notes

1️⃣ Don’t Overmix the Batter: Mix the dry and wet ingredients until just combined to avoid a dense cake. Overmixing can result in a tough texture instead of a soft, tender crumb.

2️⃣ Grease the Pan Thoroughly: Properly grease and flour your Bundt or tube pan to ensure the cake releases easily after baking. This step is crucial to maintain the cake’s beautiful shape.

3️⃣ Cool Before Glazing: Allow the cake to cool completely before adding the caramel glaze. If the cake is still warm, the glaze may slide off instead of creating a smooth, glossy finish.
