Description

Classic Apricot Buckle made with tender cake batter, warm spices, and juicy apricots.


Ingredients

Scale
  • 2 cups sliced apricots
  • 1/4 cup unsalted butter, chilled and cubed
  • 3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup self-rising flour
  • 3/4 cup unsalted butter, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 3 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F and prepare an 8-inch square pan.
  2. Toss apricots with cinnamon, nutmeg, and salt.
  3. Mix flour, softened butter, sugar, eggs, and vanilla until combined.
  4. Spread half the batter in the pan.
  5. Add apricot mixture and top with chilled butter cubes.
  6. Spread remaining batter over the fruit.
  7. Bake 45 to 50 minutes until golden.
  8. Cool 10 minutes, slice, and serve.

Notes

  1. Do not overmix the batter.
  2. Drain canned apricots well before using.
  3. Serve warm with whipped cream or ice cream.
