  • 2 lbs boneless, skinless chicken thighs or breasts
  • 2 cups long-grain white rice (like Basmati or Jasmine)
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup tomato sauce
  • 1 cup shredded Queso Blanco or Pepper Jack cheese
  • 1 cup evaporated milk
  • 1 can (4 oz) diced green chilies
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 packet Sazón seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Prepare the Chicken: Season the chicken with salt, pepper, cumin, and chili powder. Heat 1 tbsp of olive oil in a large skillet over medium heat. Sear the chicken on both sides until golden and cooked through (about 5-6 minutes per side). Remove and set aside.
  • Toast the Rice: In the same skillet, add the remaining olive oil. Add the rice and stir for 2-3 minutes until it’s lightly golden and fragrant.
  • Cook the Vegetables: Add onions, bell peppers, and garlic to the skillet. Sauté until softened and aromatic (about 5 minutes).
  • Combine Ingredients: Stir in the tomato sauce, diced chilies, and chicken broth. Nestle the chicken back into the skillet and bring the mixture to a simmer.
  • Simmer and Cook: Cover the skillet and reduce the heat to low. Let the dish cook for 18-20 minutes, or until the rice absorbs most of the liquid and becomes tender.
  • Cheesy Finish: Remove the lid, stir in the evaporated milk, and sprinkle the cheese evenly. Stir gently until the cheese melts and combines with the sauce, creating a creamy texture.
  • Serve: Garnish with fresh cilantro or parsley if desired. Serve hot and enjoy the deliciously cheesy flavors!
