Description

Fresh Authentic Greek Salad with cucumber, tomatoes, bell pepper, feta cheese, Kalamata olives, and homemade Mediterranean dressing.


Ingredients

  • 1 large cucumber, diced
  • 1 pint grape tomatoes, halved
  • 1 green bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 4 ounces feta cheese, crumbled
  • 1/3 cup red apple vinegar
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables.
  2. Combine cucumber, tomatoes, bell pepper, red onion, olives, and feta cheese in a large bowl.
  3. Whisk together vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
  4. Slowly drizzle in olive oil while whisking until the dressing is emulsified.
  5. Pour dressing over the salad.
  6. Gently toss until evenly coated.
  7. Serve immediately or chill briefly before serving.
