Description

These juicy, tender meatballs made with lean ground chicken and creamy ricotta cheese are a game-changer! Healthier than traditional beef meatballs, they’re perfect for pasta, subs, or as a standalone dish. Baked to perfection, they’re packed with flavor and easy to prepare!

Ingredients

Scale
  • 450g (1 lb) ground chicken
  • 120g (½ cup) ricotta cheese
  • 60g (½ cup) breadcrumbs
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 30g (¼ cup) grated Parmesan cheese (optional)
  • 1 tsp lemon zest (optional)
  • ½ tsp red pepper flakes (optional)

Instructions

  • Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper.
  • Mix ingredients in a large bowl—combine chicken, ricotta, breadcrumbs, egg, parsley, garlic powder, Italian seasoning, salt, and pepper. Add Parmesan, lemon zest, or red pepper flakes if desired. Mix gently to avoid tough meatballs.
  • Form meatballs about 2.5-3 cm (1-1.5 inches) in diameter and place them evenly spaced on the baking sheet.
  • Bake for 20-25 minutes, or until golden brown and internal temperature reaches 74°C (165°F).
  • Serve hot with marinara sauce, pasta, or in a sandwich. Enjoy!
