Description

These baked feta eggs with tomatoes and spinach create a rich and satisfying breakfast or brunch dish with Mediterranean flavors.


Ingredients

Scale
  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper diced
  • 1/2 small red onion diced
  • 3 cloves garlic minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional fresh basil or chives

Instructions

  1. Preheat oven to 400°F
  2. Divide vegetables and feta into ramekins or place in one baking dish
  3. Drizzle olive oil over ingredients
  4. Mix spices and sprinkle evenly
  5. Bake for 25 minutes
  6. Stir feta and vegetables together
  7. Add spinach and mix until wilted
  8. Create wells and crack eggs into each
  9. Bake another 10 minutes
  10. Top with herbs and serve

Notes

  1. Use ramekins that hold at least 10 ounces
  2. Use an 8×8 or 9×11 baking dish if not using ramekins
  3. Serve immediately for best texture
