Description
Crispy roasted potatoes finished with creamy baked feta, lemon, herbs, honey, and roasted garlic for a rich Greek-style side dish.

- 2 large baking potatoes
- 200 g block feta cheese
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 0.5 teaspoon red chili flakes
- 1 head garlic
- 1 lemon
- 1 tablespoon honey
- 1/4 cup fresh basil
Instructions
- Preheat the oven to 390°F.
- Wash and cube the potatoes, then parboil them for 6 to 8 minutes.
- Drain the potatoes and let them steam dry for 2 to 3 minutes.
- Toss the potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
- Drizzle the garlic with olive oil, wrap in foil, and place in the dish.
- Roast for 30 to 40 minutes until golden and nearly cooked.
- Remove the garlic and add the feta to the center of the dish.
- Squeeze over half the lemon and return to the oven for 15 minutes.
- Squeeze the roasted garlic from its skins and mash.
- Gently stir the garlic, remaining lemon juice, basil, honey, and chili flakes into the potatoes and feta.
- Serve immediately.
Notes
- This recipe was updated to add the feta later for crispier potatoes and creamier cheese.
- You can reduce the garlic amount or use minced garlic for a milder flavor.
