Description

Tender buttery peach scones filled with fresh peaches and finished with a sweet creamy glaze. Perfect for breakfast, brunch, or afternoon tea.


Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter cut into cubes
  • 1 cup heavy cream
  • 1 tablespoon heavy cream for brushing
  • 1/2 teaspoon pure vanilla extract
  • 1 cup diced fresh peeled peaches
  • 1 cup confectioners’ sugar
  • 1 tablespoon honey
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Whisk together flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Cut cold butter into the flour mixture until coarse crumbs form.
  4. Whisk together heavy cream and vanilla extract in a separate bowl.
  5. Pour wet ingredients into dry ingredients and stir gently until dough forms.
  6. Fold diced peaches carefully into the dough.
  7. Shape dough into a 1-inch thick circle and cut into 8 wedges.
  8. Freeze scones for 15 to 20 minutes while oven finishes preheating.
  9. Brush tops with remaining heavy cream.
  10. Bake for 18 minutes or until golden brown.
  11. Whisk confectioners’ sugar, honey, milk, and vanilla until smooth.
  12. Drizzle glaze over cooled scones before serving.
