Description

Fresh peaches stuffed with cinnamon pecan streusel and baked until juicy and golden brown. Serve warm with vanilla ice cream.


Ingredients

  • 2 large or 3 medium ripe-firm peaches, halved and pitted
  • 2 tablespoons all-purpose flour
  • 3 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 23 tablespoons chopped pecans
  • 1/4 cup oats
  • 2 tablespoons chilled butter, cut into small pieces
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 350°F and butter a baking dish.
  2. Scoop a small cavity from the center of each peach half.
  3. Combine flour, sugars, cinnamon, salt, pecans, and oats in a bowl.
  4. Rub chilled butter into the mixture until crumbly.
  5. Fill each peach cavity with streusel topping.
  6. Place peaches cut side up in baking dish.
  7. Bake for 35 to 45 minutes until peaches soften and topping browns.
  8. Allow peaches to cool slightly before serving.
  9. Serve warm with vanilla ice cream.
