Description

Tender cheese tortellini baked in a creamy ground beef and tomato sauce, then topped with melted mozzarella and Parmesan.


Ingredients

  • 1 20-ounce package refrigerated or frozen cheese tortellini
  • 1 pound ground beef
  • 1 24-ounce jar pasta sauce
  • 8 ounces cream cheese, cubed
  • 1 to 2 cups shredded mozzarella cheese
  • 1/2 cup grated or shredded Parmesan cheese
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Nonstick cooking spray or oil for the baking dish

Instructions

  1. Preheat the oven to 350°F and grease a 9-by-13-inch baking dish.
  2. Cook the tortellini one or two minutes short of the package directions, then drain well.
  3. Brown the ground beef in a large skillet over medium-high heat with the salt, garlic powder, black pepper, and Italian seasoning.
  4. Drain the excess grease from the skillet.
  5. Reduce the heat to medium and stir in the pasta sauce.
  6. Add the cubed cream cheese and simmer for three to five minutes, stirring until smooth.
  7. Gently fold the cooked tortellini into the meat sauce.
  8. Transfer the mixture to the prepared baking dish and spread it evenly.
  9. Top with the shredded mozzarella and Parmesan.
  10. Bake uncovered on the center rack for 20 minutes, or until bubbling around the edges.
  11. Broil for two to three minutes, watching closely, until the cheese develops light golden spots.
  12. Rest for five to ten minutes before serving.

Notes

  1. Cook the tortellini slightly under the package time so it does not become too soft while baking.
  2. Use up to two cups of mozzarella for an extra-cheesy casserole.
  3. Store leftovers in an airtight container in the refrigerator for up to four days.
  4. Freeze individual portions for up to two months.
  5. Add a spoonful of water or pasta sauce before reheating to keep the pasta moist.
