Description

Easy Balsamic Chicken & Veggie Orzo


Ingredients

4 boneless, skinless chicken breasts

1 cup orzo pasta

2 cups chicken broth

1 cup cherry tomatoes, halved

1 zucchini, diced

1 bell pepper, diced

1 red onion, chopped

3 tablespoons balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil for garnish


Instructions

1. Season the chicken breasts with salt, pepper, and half the oregano. Heat 1 tablespoon olive oil in a large skillet over medium-high heat and cook chicken 6–7 minutes per side until golden and cooked through. Remove and rest.

2. Add remaining olive oil and sauté red onion 2–3 minutes. Add garlic and cook 30 seconds.

3. Add bell pepper and zucchini; cook 3–4 minutes. Stir in orzo to coat.

4. Pour in broth; bring to a boil. Reduce heat, cover, and simmer 10–12 minutes until orzo is tender.

5. Slice chicken. Add tomatoes, balsamic, and remaining oregano to pan. Fold in chicken and cook 2–3 minutes.

6. Remove from heat and garnish with basil.

Notes

This recipe adapts well to seasonal vegetables. Add cream or cheese for richness, or keep it light with extra broth. Doubles easily for meal prep.
