Soft banana cookies inspired by banana cream pie, topped with smooth banana cream and a light whipped cream finish.

- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups mashed ripe bananas
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups white chocolate chips
- 1 cup heavy whipping cream
- 1/2 cup banana pudding mix
- 2 tablespoons powdered sugar
- 3/4 cup heavy whipping cream
- 1 tablespoon powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in eggs one at a time, then add vanilla extract and mashed bananas.
- Whisk flour, baking soda, and salt, then mix into wet ingredients.
- Fold in white chocolate chips.
- Scoop dough onto baking sheets and bake for 12–14 minutes.
- Cool cookies completely.
- Prepare banana cream topping and spread over cookies.
- Top with whipped cream before serving.
Notes
- Use ripe bananas with brown spots for best flavor.
- Allow cookies to cool fully before adding toppings.
