Instructions

  • Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Mix crushed vanilla wafers, melted butter, and sugar until combined.
    • Press the mixture into a springform pan.
    • Bake for 10 minutes, then let it cool.
  • Make the Filling:
    • Beat cream cheese and sugar until smooth.
    • Add sour cream, mashed bananas, and vanilla. Mix well.
    • Add eggs one at a time, mixing gently after each addition.
  • Assemble and Bake:
    • Pour the filling over the cooled crust. Smooth the top.
    • Bake at 325°F (163°C) for 1 hour and 15 minutes. The edges should be set, and the center slightly jiggly.
    • Let it cool in the oven with the door slightly open for 1 hour.
    • Chill in the refrigerator for at least 4 hours or overnight.
  • Prepare the Crunch Topping:
    • Toast chopped nuts, granola, and shredded coconut in a pan over medium heat until golden.
    • Let cool and mix in chocolate chips if desired.
  • Final Assembly:
    • Spread whipped cream over the chilled cheesecake.
    • Sprinkle the crunch topping evenly on top.
    • Garnish with sliced bananas and drizzle caramel sauce if desired.
