Soft banana-flavored cupcakes filled with creamy pudding and topped with fluffy whipped cream and a vanilla wafer. These nostalgic treats are easy to make and perfect for any occasion!
Ingredients
For the Cupcakes:
- 2 ripe bananas, mashed (about 1 cup / 240g)
- 1 ½ cups (190g) all-purpose flour
- ¾ cup (150g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- ½ cup (120ml) milk
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
For the Pudding Filling:
- 1 package (3.4 oz / 96g) vanilla pudding mix
- 1 ½ cups (360ml) cold milk
- 1 mashed banana (about ½ cup / 120g)
For the Topping:
- 1 ½ cups (360ml) whipped cream or frosting
- 12 vanilla wafers
- 1 banana, sliced for garnish
Instructions
1️⃣ Prepare the Cupcake Batter: Mash the bananas until smooth. In a separate bowl, whisk flour, baking powder, and baking soda. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla and mashed bananas. Gradually mix in dry ingredients, alternating with milk, until smooth.
2️⃣ Bake the Cupcakes: Preheat the oven to 350°F (175°C). Line a cupcake pan with liners and fill each about ¾ full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
3️⃣ Make the Pudding Filling: Whisk pudding mix and cold milk until thick. Stir in mashed banana and let sit for 5 minutes.
4️⃣ Fill the Cupcakes: Use a spoon or cupcake corer to remove the center of each cupcake. Fill a piping bag with pudding and squeeze into the hollowed-out centers.
5️⃣ Add Toppings: Pipe whipped cream or frosting on top. Garnish with a vanilla wafer and a banana slice.
