For the Crust:

  • 2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup brown sugar

For the Filling:

  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 ripe bananas (mashed)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

For the Topping:

  • 2 bananas (sliced)
  • 3 tbsp butter
  • 1/3 cup brown sugar
  • 1/4 cup heavy cream
  • Optional: 1/4 cup pecans (chopped)

Instructions

Prepare the Crust:

  • Preheat the oven to 350°F (175°C).
  • Mix graham cracker crumbs, melted butter, and brown sugar until evenly combined.
  • Press the mixture into a 9-inch springform pan and bake for 10 minutes. Let cool.

2. Make the Filling:

  • In a large bowl, beat cream cheese until smooth. Gradually mix in sugar and sour cream.
  • Add eggs one at a time, beating after each addition.
  • Stir in mashed bananas, cinnamon, and nutmeg.
  • Pour filling over the cooled crust and smooth the top.

3. Bake the Cheesecake:

  • Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the cheesecake pan.
  • Bake at 300°F (150°C) for 60 minutes, then turn off the oven and leave the cheesecake inside for another hour.
  • Remove and cool completely before refrigerating for at least 6 hours or overnight.

4. Prepare the Topping:

  • Melt butter in a skillet over medium heat. Add brown sugar and stir until dissolved.
  • Stir in heavy cream and cook for 2-3 minutes. Add banana slices and cook until softened.
  • Remove from heat and cool slightly.

5. Assemble the Cheesecake:

  • Pour the banana topping over the chilled cheesecake. Garnish with pecans if desired.
