For the Crust:
- 2 cups graham cracker crumbs

- 1/4 cup brown sugar

- 1 cup sugar

- 3 large eggs
- 2 ripe bananas (mashed)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
For the Topping:
- 2 bananas (sliced)
- 3 tbsp butter
- 1/3 cup brown sugar
- 1/4 cup heavy cream
- Optional: 1/4 cup pecans (chopped)
Instructions
Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and brown sugar until evenly combined.
- Press the mixture into a 9-inch springform pan and bake for 10 minutes. Let cool.
2. Make the Filling:
- In a large bowl, beat cream cheese until smooth. Gradually mix in sugar and sour cream.
- Add eggs one at a time, beating after each addition.
- Stir in mashed bananas, cinnamon, and nutmeg.
- Pour filling over the cooled crust and smooth the top.
3. Bake the Cheesecake:
- Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the cheesecake pan.
- Bake at 300°F (150°C) for 60 minutes, then turn off the oven and leave the cheesecake inside for another hour.
- Remove and cool completely before refrigerating for at least 6 hours or overnight.
4. Prepare the Topping:
- Melt butter in a skillet over medium heat. Add brown sugar and stir until dissolved.
- Stir in heavy cream and cook for 2-3 minutes. Add banana slices and cook until softened.
- Remove from heat and cool slightly.
5. Assemble the Cheesecake:
- Pour the banana topping over the chilled cheesecake. Garnish with pecans if desired.
