Creamy BBQ Chicken Mac and Cheese with smoky barbecue chicken, tender macaroni, and melted cheddar and mozzarella cheese for a rich comfort food dinner.

- 2 boneless skinless chicken breasts
- 1 cup BBQ sauce
- 2 cups elbow macaroni
- 1 1/2 cups cheddar cheese shredded
- 1 cup mozzarella cheese shredded
- 2 cups milk
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
Instructions
- Season chicken breasts with salt and pepper
- Heat olive oil in a skillet over medium heat and cook chicken for 6 to 7 minutes per side until fully cooked
- Remove chicken and shred using two forks
- Bring salted water to a boil and cook macaroni according to package instructions then drain
- Melt butter in a saucepan over medium heat
- Whisk in flour and cook for 1 minute
- Slowly whisk in milk garlic powder and onion powder and cook until sauce thickens
- Stir in cheddar and mozzarella cheese until melted and smooth
- Add cooked pasta and shredded chicken to the cheese sauce
- Pour in BBQ sauce and mix until everything is coated
- Serve hot with extra BBQ sauce if desired
Notes
- Use rotisserie chicken for a faster preparation
- Add chopped jalapenos or hot sauce for a spicy version
- Reheat leftovers with a splash of milk to restore creaminess
