Description

Creamy BBQ Chicken Mac and Cheese with smoky barbecue chicken, tender macaroni, and melted cheddar and mozzarella cheese for a rich comfort food dinner.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 cups elbow macaroni
  • 1 1/2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 2 cups milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Season chicken breasts with salt and pepper
  2. Heat olive oil in a skillet over medium heat and cook chicken for 6 to 7 minutes per side until fully cooked
  3. Remove chicken and shred using two forks
  4. Bring salted water to a boil and cook macaroni according to package instructions then drain
  5. Melt butter in a saucepan over medium heat
  6. Whisk in flour and cook for 1 minute
  7. Slowly whisk in milk garlic powder and onion powder and cook until sauce thickens
  8. Stir in cheddar and mozzarella cheese until melted and smooth
  9. Add cooked pasta and shredded chicken to the cheese sauce
  10. Pour in BBQ sauce and mix until everything is coated
  11. Serve hot with extra BBQ sauce if desired

Notes

  1. Use rotisserie chicken for a faster preparation
  2. Add chopped jalapenos or hot sauce for a spicy version
  3. Reheat leftovers with a splash of milk to restore creaminess
  4. Store leftovers in the refrigerator for up to 3 days
