Description

Crispy, cheesy, and packed with smoky BBQ flavor, these BBQ chicken quesadillas are the ultimate comfort food! Perfect for a quick weeknight meal or a party favorite, they’ll leave everyone asking for seconds.

 


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce (your favorite kind)
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup red onion, thinly sliced (optional)
  • 1 jalapeño, sliced (optional, for spice)
  • 2 tbsp chopped fresh cilantro (optional)
  • 2 tbsp olive oil or butter (for cooking)

Instructions

  • Prepare the Chicken: In a mixing bowl, combine shredded chicken and BBQ sauce. Mix until chicken is well-coated.
  • Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle 1/4 cup of shredded cheese evenly over half of the tortilla. Spread 1/2 cup of the BBQ chicken mixture on top of the cheese. Add optional toppings like red onion, jalapeño, or cilantro for extra flavor. Sprinkle an additional 1/4 cup of cheese on top of the chicken, then fold the tortilla in half. Repeat with remaining tortillas.
  • Cook the Quesadillas:
    • Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Place one folded tortilla in the skillet and cook for 2-3 minutes, pressing down gently with a spatula to help it crisp up. Flip carefully and cook for another 2-3 minutes, until golden brown and cheese is melted.
    • Repeat with the remaining quesadillas, adding more oil or butter as needed.
  • Serve: Remove from the skillet and let cool for a minute before slicing into wedges. Serve with sour cream, guacamole, or salsa for dipping!

Notes

  • Don’t Overfill the Tortillas: Adding too much filling can make the quesadillas hard to flip and result in a soggy texture. A moderate layer of chicken and cheese ensures a perfect balance and crispy edges.
  • Preheat the Pan for Crispy Quesadillas: Make sure your skillet is hot before cooking. This helps the tortilla crisp up quickly, locking in the cheesy, BBQ goodness without becoming greasy.
  • Customize with Add-ins or Substitutions: Get creative! Add veggies like bell peppers or corn for extra texture, or swap out chicken for pulled pork or a vegetarian option like black beans or grilled zucchini.
