- 1/2 cup BBQ sauce (your favorite kind)
- 4 large flour tortillas
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

- 1 jalapeño, sliced (optional, for spice)
- 2 tbsp chopped fresh cilantro (optional)
- 2 tbsp olive oil or butter (for cooking)
Instructions
- Prepare the Chicken: In a mixing bowl, combine shredded chicken and BBQ sauce. Mix until chicken is well-coated.
- Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle 1/4 cup of shredded cheese evenly over half of the tortilla. Spread 1/2 cup of the BBQ chicken mixture on top of the cheese. Add optional toppings like red onion, jalapeño, or cilantro for extra flavor. Sprinkle an additional 1/4 cup of cheese on top of the chicken, then fold the tortilla in half. Repeat with remaining tortillas.
- Cook the Quesadillas:
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Place one folded tortilla in the skillet and cook for 2-3 minutes, pressing down gently with a spatula to help it crisp up. Flip carefully and cook for another 2-3 minutes, until golden brown and cheese is melted.
- Repeat with the remaining quesadillas, adding more oil or butter as needed.
- Serve: Remove from the skillet and let cool for a minute before slicing into wedges. Serve with sour cream, guacamole, or salsa for dipping!
