Description

BBQ Ranch Chicken Casserole is a quick and easy pasta dinner loaded with tender shredded chicken, smoky bacon, sweet corn, green chiles, cheddar cheese, barbecue sauce, and creamy ranch dressing. It comes together in less than 30 minutes and makes a satisfying family meal.

  • 12 ounces bowtie pasta
  • 3 cups cooked shredded chicken breast, such as rotisserie chicken or leftovers
  • 1/2 cup chopped cooked bacon or real bacon pieces
  • 2 1/2 cups shredded cheddar cheese blend, plus more for topping if desired
  • 15 ounces canned corn, drained
  • 10 ounces Rotel diced tomatoes and green chiles, undrained
  • 7 ounces diced green chiles, undrained
  • 1 cup ranch dressing
  • 3/4 cup barbecue sauce
  • 1 tablespoon minced onions

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cook the bowtie pasta until al dente according to the package directions.
  3. Drain the pasta well and transfer it to a large mixing bowl.
  4. Add the cooked shredded chicken, chopped bacon, shredded cheese, drained corn, undrained Rotel, undrained diced green chiles, ranch dressing, barbecue sauce, and minced onions.
  5. Toss the mixture until the pasta and chicken are evenly coated.
  6. Transfer the mixture to a casserole dish and spread it into an even layer.
  7. Top with additional shredded cheese if desired.
  8. Bake for 15 to 20 minutes, until the casserole is hot and the cheese has melted.
  9. Let the casserole rest for a few minutes before serving.

Notes

  1. Cook the pasta only until al dente so it does not become soft while baking.
  2. Use cooked bacon or real bacon pieces rather than imitation bacon bits for the best flavor.
  3. Rotisserie chicken makes preparation faster, although leftover or freshly cooked chicken also works well.
  4. Do not drain the Rotel or diced green chiles because their liquid adds moisture and flavor.
