Description

Ingredients

  • 1 pound flank steak or skirt steak
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 cup chicken stock
  • 2 tablespoons Shaoxing wine
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar
  • 1 tablespoon cornstarch
  • 1 head broccoli florets
  • 1 tablespoon peanut oil
  • 3 garlic cloves minced
  • 2 teaspoons ginger minced
  • Steamed rice for serving

Instructions

  1. Slice the beef thinly against the grain.
  2. Combine beef with soy sauce, oil, cornstarch, and baking soda.
  3. Marinate the beef for 10 minutes.
  4. Whisk together stock, wine, soy sauces, sugar, and cornstarch.
  5. Steam broccoli in a skillet until crisp tender.
  6. Remove broccoli and heat oil in the skillet.
  7. Sear the beef until browned but still juicy.
  8. Add garlic and ginger and stir briefly.
  9. Return broccoli to the skillet.
  10. Pour in the sauce and stir until thickened.
  11. Serve hot over steamed rice.

Notes

  1. Use baking soda for extra tender beef.
  2. Dark soy sauce adds deeper color and flavor.
  3. Add sesame oil at the end for extra aroma.
  4. Serve immediately for best texture.
