- 1 pound ground beef
- 4 medium russet potatoes, peeled and diced
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 1 cup shredded cheddar cheese, divided
- 1 cup sour cream
- 1/2 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and dice the potatoes, then chop the onion and mince the garlic.
- Heat olive oil in a skillet over medium heat and sauté onion and garlic until softened.
- Add ground beef, season with salt, pepper, thyme, and paprika, and cook until browned.
- Pour in beef broth and simmer briefly to combine flavors.
- Mix beef mixture with potatoes, sour cream, and half of the cheese.
- Transfer to a baking dish and top with remaining cheese.
- Cover and bake for 30 minutes.
- Uncover and bake 10 to 15 minutes until cheese is melted and bubbly.
- Rest for 10 minutes before serving.
