Description

Layers of seasoned beef, tender potatoes, sour cream, and melted cheddar baked into a hearty one-dish family dinner.


Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the potatoes, then chop the onion and mince the garlic.
  3. Heat olive oil in a skillet over medium heat and sauté onion and garlic until softened.
  4. Add ground beef, season with salt, pepper, thyme, and paprika, and cook until browned.
  5. Pour in beef broth and simmer briefly to combine flavors.
  6. Mix beef mixture with potatoes, sour cream, and half of the cheese.
  7. Transfer to a baking dish and top with remaining cheese.
  8. Cover and bake for 30 minutes.
  9. Uncover and bake 10 to 15 minutes until cheese is melted and bubbly.
  10. Rest for 10 minutes before serving.

Notes

  1. Cut potatoes evenly for consistent cooking.
  2. Let the casserole rest before serving so it sets properly.
  3. Use freshly shredded cheddar for best melting.
