A hearty and classic dish that combines seasoned ground beef, tender rice, and flavorful vegetables, all baked to perfection. Perfect for busy weeknights or family gatherings!
Ingredients
- 1 lb (450g) ground beef
- 1 cup (200g) uncooked white rice
- 1 ½ cups (360ml) beef broth
- 1 cup (240ml) tomato sauce
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup (150g) shredded cheddar cheese
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Cook the Beef and Vegetables: In a skillet over medium heat, heat olive oil. Add ground beef and cook until browned. Drain excess fat. Add diced onion, bell pepper, and garlic. Sauté until softened.
- Cook the Rice: While the beef cooks, prepare the rice according to package instructions.
- Combine Ingredients: In a large mixing bowl, combine cooked beef, cooked rice, tomato sauce, beef broth, paprika, Italian seasoning, salt, and pepper. Stir well.
- Assemble the Casserole: Pour the mixture into a greased baking dish. Sprinkle shredded cheddar cheese evenly on top.
- Bake: Preheat the oven to 350°F (175°C). Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and golden.
- Serve: Let it cool slightly before serving. Enjoy this comforting casserole with a side salad or garlic bread!
Notes
1️⃣ Rice Texture Matters: Slightly undercook the rice before baking to prevent it from becoming mushy in the casserole. White rice works best for quick cooking, but brown rice adds more fiber and nutrients (just adjust cooking time).
2️⃣ Customize to Your Taste: Feel free to add extra vegetables like mushrooms, peas, or spinach, and adjust the seasonings for a Mexican or Italian twist. Cheese lovers can add an extra layer of shredded cheese for a golden, bubbly crust.
3️⃣ Make-Ahead Friendly: This casserole can be assembled ahead of time and stored in the fridge or freezer. Just thaw (if frozen) and bake when ready for an easy and delicious meal!
