Description
A homemade Taco Bell Beefy Melt Burrito filled with seasoned beef, Mexican rice, crunchy chips, cheese dip, and sour cream wrapped in a warm tortilla.
Ingredients

- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- 1/4 cup water or beef broth
- 1 cup refried beans optional
- 2 cups cooked Mexican rice or instant Mexican rice
- 4 burrito sized flour tortillas
- 2 cups Fritos or Doritos
- 1 cup cheese dip warmed
- 1 cup shredded Mexican cheese blend
- 1/2 cup sour cream
- Salsa if desired
Instructions
- Cook ground beef in a sauté pan over medium heat until no longer pink
- Add taco seasoning and water then stir and cook one more minute
- Stir in refried beans and adjust consistency with a little water if needed
- Prepare Mexican rice or warm leftover rice
- Warm tortillas in the microwave for 30 seconds
- Lay tortilla flat and add a few tablespoons of the beef mixture in the center
- Add rice on top of the beef
- Layer Fritos or Doritos over the rice
- Add a spoonful of cheese dip
- Sprinkle shredded Mexican cheese
- Add sour cream
- Fold the sides inward then roll tightly into a burrito
- Repeat with remaining tortillas
- Serve immediately or toast burritos in a skillet over medium heat until lightly crisp
Notes
- Serve fresh so the chips stay crunchy
- Store leftovers in an airtight container in the refrigerator for up to 5 days
- For freezing leave out the chips and wrap burritos individually in plastic wrap and foil
- Reheat in the microwave oven or stovetop until heated through
- Toast burritos in a skillet for a crisp exterior if desired
