Description

A homemade Taco Bell Beefy Melt Burrito filled with seasoned beef, Mexican rice, crunchy chips, cheese dip, and sour cream wrapped in a warm tortilla.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 (1 oz) packet taco seasoning
  • 1/4 cup water or beef broth
  • 1 cup refried beans optional
  • 2 cups cooked Mexican rice or instant Mexican rice
  • 4 burrito sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup cheese dip warmed
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • Salsa if desired

Instructions

  1. Cook ground beef in a sauté pan over medium heat until no longer pink
  2. Add taco seasoning and water then stir and cook one more minute
  3. Stir in refried beans and adjust consistency with a little water if needed
  4. Prepare Mexican rice or warm leftover rice
  5. Warm tortillas in the microwave for 30 seconds
  6. Lay tortilla flat and add a few tablespoons of the beef mixture in the center
  7. Add rice on top of the beef
  8. Layer Fritos or Doritos over the rice
  9. Add a spoonful of cheese dip
  10. Sprinkle shredded Mexican cheese
  11. Add sour cream
  12. Fold the sides inward then roll tightly into a burrito
  13. Repeat with remaining tortillas
  14. Serve immediately or toast burritos in a skillet over medium heat until lightly crisp

Notes

  1. Serve fresh so the chips stay crunchy
  2. Store leftovers in an airtight container in the refrigerator for up to 5 days
  3. For freezing leave out the chips and wrap burritos individually in plastic wrap and foil
  4. Reheat in the microwave oven or stovetop until heated through
  5. Toast burritos in a skillet for a crisp exterior if desired
