Description

Soft and traditional Beignets de Carnaval flavored with orange blossom water, inspired by a classic family recipe.


Ingredients

Scale
  • 500 g all-purpose flour
  • 100 g unsalted butter
  • 150 g granulated sugar
  • 3 tablespoons crème fraîche
  • 2 tablespoons orange blossom water
  • 2 tablespoons neutral oil
  • 1 packet baking powder
  • 1 pinch salt
  • 4 eggs
  • 1/3 cup water

Instructions

  1. Soften the butter and whisk the eggs with salt.
  2. Add sugar and beat until smooth.
  3. Mix in crème fraîche, oil, butter, water, and orange blossom water.
  4. Add baking powder and flour gradually to form a soft dough.
  5. Rest the dough in a warm place for 2 to 3 hours.
  6. Roll dough to 3–4 mm thickness and cut shapes.
  7. Heat oil and fry beignets until lightly golden.
  8. Drain and dust with powdered sugar.

  1. Keep oil moderately hot.
  2. Do not overwork the dough.
