  • 8 oz (225g) Bellissima Pasta (e.g., spaghetti or your favorite variety)

  • 2 large eggs

  • 1/2 cup (50g) grated Pecorino Romano cheese

  • 4 oz (115g) pancetta or guanciale, diced

  • Freshly ground black pepper


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup of pasta water and drain.

  2. In a pan, cook pancetta or guanciale over medium heat until crispy. Set aside.

  3. In a bowl, whisk together eggs, cheese, and black pepper.

  4. Add hot, drained pasta to the bowl and quickly toss with the egg mixture. The heat will gently cook the eggs into a creamy sauce.

  5. Stir in the crispy pancetta and a splash of reserved pasta water, if needed, to loosen the sauce.

  6. Serve immediately with extra Pecorino and pepper on top.

Notes

Use freshly grated cheese for best texture and flavor.

For a vegetarian version, omit pancetta and add sautéed mushrooms or zucchini.

For a modern twist, finish cooking the pasta directly in the sauce pan for better absorption.
