Description

Berry Granola Yogurt Bark combines creamy yogurt, mixed berries, honey, and crunchy granola in an easy frozen breakfast, snack, or dessert that kids and adults can enjoy.


Ingredients

Scale
  • 3 cups mixed berries, fresh or frozen, divided
  • 2 cups plain Greek or regular yogurt
  • 2 to 3 tablespoons honey
  • 1/2 cup granola

Instructions

  1. Line a 9-by-13-inch baking dish or rimmed baking sheet with parchment paper.
  2. Set aside 1 cup of the mixed berries for the topping, and chop large strawberries into small pieces.
  3. Add the remaining 2 cups of berries, yogurt, and 2 tablespoons of honey to a blender.
  4. Blend until smooth, then taste and add the remaining tablespoon of honey when needed.
  5. Pour the berry yogurt mixture onto the prepared pan.
  6. Spread the mixture into an even layer about one-quarter to one-half inch thick.
  7. Scatter the reserved berries and granola evenly over the yogurt.
  8. Gently press the toppings into the yogurt so they stay attached.
  9. Freeze on a level surface for at least 4 hours or until completely firm.
  10. Lift the bark from the pan and break or cut it into approximately 16 pieces.
  11. Serve immediately and return unused pieces to the freezer.

Notes

  1. Use Greek yogurt for a thicker, creamier texture or regular yogurt for a lighter result.
  2. When using sweetened vanilla or honey yogurt, omit or reduce the honey.
  3. Fresh or frozen berries work well in the blended yogurt base.
  4. Pat thawed frozen berries dry before using them as a topping.
  5. Chop large berries and granola clusters into age-appropriate pieces when serving children.
  6. This recipe is suitable for children age 1 year and older.
  7. Store the bark in an airtight freezer-safe container for up to 1 month.
  8. Place parchment paper between layers to keep the pieces from sticking together.
