Ingredients
3/4 cup (168 g) unsalted butter*
1 cup (200 g) packed light brown sugar
1/4 cup (50 g) granulated sugar
1 large egg + 1 large egg yolk, at room temperature
1 tablespoon pure vanilla extract
1 3/4 cup (220 g) all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon kosher salt + more flaky seat salt for sprinkling
1 1/2 cups (255 g) semi sweet chocolate chips or roughly chopped chocolate
Instructions
1. Place the butter in a small saucepan and set over medium low heat. Stir often until golden brown.
2. Combine browned butter, brown sugar, and granulated sugar. Mix well.
3. Add egg, yolk, and vanilla. Mix again.
4. Fold in flour, baking soda, and salt. Do not overmix.
5. Fold in chocolate. Chill dough 1 hour or up to overnight.
6. Preheat oven to 350°F. Line trays with parchment.
7. Scoop dough into 1 1/2 ounce portions. Space well.
8. Bake 12 to 13 minutes until edges are golden and centers soft.
9. Cool slightly and sprinkle flaky salt.
Notes
If butter reduces below 140 g after browning, add milk until it reaches 140 g.
Add flour in increments to avoid dry dough.
Remove cookies when edges brown lightly. Centers should appear soft.
