Description

Baked rice paper rolls filled with seasoned ground beef, melted cheddar, crunchy pickles, and shredded lettuce for a lighter Big Mac-inspired meal.


Ingredients

  • 8 rice paper wraps
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt to taste
  • Black pepper to taste
  • 8 slices low-fat cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup sliced pickles
  • Sesame seeds (optional)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper
  2. Cook ground beef and chopped onion in a skillet until browned and soft
  3. Season with garlic powder, onion powder, salt, and pepper
  4. Drain excess fat and let the beef mixture cool slightly
  5. Soak rice paper wraps in warm water for 15 to 20 seconds until pliable
  6. Place cheese, beef, lettuce, and pickles in the center of each wrap
  7. Fold sides in and roll tightly, seam-side down
  8. Sprinkle with sesame seeds if using
  9. Bake for 20 to 25 minutes until golden and lightly crispy

Notes

  1. Do not over-soak rice paper wraps
  2. Allow beef to cool slightly before assembling
  3. Reheat leftovers in the oven or air fryer for best texture
