Ingredients
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (50g) cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
For the Biscoff Layer:
- 1/2 cup (120g) Biscoff spread
- 8–10 Biscoff cookies, crushed
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Make the Brownie Batter: In a large bowl, whisk melted butter, granulated sugar, and brown sugar. Add eggs and vanilla, whisking until smooth.
- Combine Dry Ingredients: In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually fold into the wet mixture until just combined.
- Add the Biscoff Layer: Pour half of the brownie batter into the prepared pan. Spoon dollops of Biscoff spread over the batter and sprinkle half of the crushed Biscoff cookies. Add the remaining batter on top and smooth it out.
- Top and Swirl: Drizzle more Biscoff spread on top and use a toothpick to create swirls. Sprinkle the remaining crushed cookies over the surface.
- Bake: Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Cool and Slice: Let the brownies cool completely before slicing them into squares
