Description

Irresistibly fudgy brownies swirled with creamy Biscoff cookie butter. A rich chocolatey treat with caramel and cinnamon undertones, perfect for indulgence or sharing with loved ones!

 


Ingredients

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1/2 cup (50g) cocoa powder
  • 1/2 cup (60g) all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup (150g) Biscoff cookie butter (plus extra for swirling)
  • Optional: 1/4 cup crushed Biscoff cookies

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper for easy removal.
  • In a large mixing bowl, combine melted butter and sugar. Whisk until smooth and glossy.
  • Add eggs, one at a time, whisking well after each addition until fully incorporated.
  • Sift in cocoa powder, flour, and salt. Fold gently until a smooth batter forms, avoiding overmixing.
  • Pour half the batter into the prepared pan, spreading it evenly with a spatula.
  • Drop spoonfuls of Biscoff cookie butter over the batter, then cover with the remaining brownie batter.
  • Dollop extra Biscoff on top and use a skewer or knife to swirl it into the batter for a marbled effect.
  • If desired, sprinkle crushed Biscoff cookies over the top for added texture.
  • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Avoid overbaking for fudgy brownies.
  • Let the brownies cool completely in the pan before slicing into squares.

Notes

  • Don’t Overbake: To achieve fudgy brownies, take them out of the oven when the center is set but still slightly soft. They will firm up as they cool. Overbaking will result in a dry texture.
  • Swirling Technique: When swirling the Biscoff, use a light hand to create visible ribbons of cookie butter without fully mixing it into the brownie batter. This ensures distinct pockets of flavor.
  • Cool Before Slicing: Allow the brownies to cool completely in the pan before cutting. This helps them set properly and prevents them from crumbling. Use a sharp knife for clean slices.
