Irresistibly fudgy brownies swirled with creamy Biscoff cookie butter. A rich chocolatey treat with caramel and cinnamon undertones, perfect for indulgence or sharing with loved ones!
Ingredients
Scale
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1/2 cup (50g) cocoa powder
- 1/2 cup (60g) all-purpose flour
- 1/4 tsp salt
- 1/2 cup (150g) Biscoff cookie butter (plus extra for swirling)
- Optional: 1/4 cup crushed Biscoff cookies
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper for easy removal.
- In a large mixing bowl, combine melted butter and sugar. Whisk until smooth and glossy.
- Add eggs, one at a time, whisking well after each addition until fully incorporated.
- Sift in cocoa powder, flour, and salt. Fold gently until a smooth batter forms, avoiding overmixing.
- Pour half the batter into the prepared pan, spreading it evenly with a spatula.
- Drop spoonfuls of Biscoff cookie butter over the batter, then cover with the remaining brownie batter.
- Dollop extra Biscoff on top and use a skewer or knife to swirl it into the batter for a marbled effect.
- If desired, sprinkle crushed Biscoff cookies over the top for added texture.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Avoid overbaking for fudgy brownies.
- Let the brownies cool completely in the pan before slicing into squares.
Notes
- Don’t Overbake: To achieve fudgy brownies, take them out of the oven when the center is set but still slightly soft. They will firm up as they cool. Overbaking will result in a dry texture.
- Swirling Technique: When swirling the Biscoff, use a light hand to create visible ribbons of cookie butter without fully mixing it into the brownie batter. This ensures distinct pockets of flavor.
- Cool Before Slicing: Allow the brownies to cool completely in the pan before cutting. This helps them set properly and prevents them from crumbling. Use a sharp knife for clean slices.
